Spicy Asparagus with Shrimp

Description

This is one of my favorite Malaysian recipe. It only takes very few ingredients but has complex and balanced flavors

Tips

If this is your first time cooking with shrimp paste, be aware that it might stink a lot when you open the jar, or until it is fully cooked. The smell will eventually fade away with heat.

You can easily find the shrimp paste and chili garlic sauce in asian grocery stores.

Ingredients

2 tbs cooking oil
1 bunch asparagus (cut into 2 inch pieces)
1/4 lbs jumbo shrimp
1/4 yellow onions (sliced)
1/2 tbs shrimp paste
1 tbs chili garlic sauce (substitue: crushed red peppers)
1 tsp sesame oil

Directions

On a skillet, heat 1 tbs of cooking oil on high heat

Sear the shrimp on both sides till it becomes red

Once cooked remove the shrimp and keep it aside

Add the remaining 1 tbs of oil

Add the sliced onions and let it cook till it softens

Add the shrimp paste, chili garlic sauce and let it cook for about 5 minutes

You may add a splash of water to prevent from burning

Add the asparagus and cover the pan till the mixture starts boiling. Stir occasionally to prevent burning. Cook the asparagus to desired texture.

Combine the cooked shrimp with asparagus. You may turn the heat off at this point

Finally add the sesame oil and mix thoroughly. You will notice a sudden changes in the aroma, which helps to balance the strong smell of shrimp paste
