Linguine Carbonara

Description

Carbonara is one of the easiest recipe with minimal ingredients and yet it is so tasteful!

Tips

  1. The trick is to make sure the pasta is not too hot to avoid scrambling the egg-cheese mixture.
  2. Some pasta water can help to increase the creaminess due to the starch that leached out during cooking

Ingredients

Linguine pasta
Chopped pancetta (substitute: bacon)
1/2 tbs olive oil
3 eggs
1/2 cup grated parmesan cheese
Ground black pepper
Parsley flakes (for garnish)

Directions

Prepare the linguine according to the manufacturer's instructions. Make sure the water has enough salt. The creamy sauce can be prepared while the linguine is cooking

On a skillet, cook the chopped pancetta on medium heat

While waiting for the pancetta to cook, prepare the egg-cheese mixture

On a separate bowl, combine 2 whole eggs and just the yolk from the third egg, parmesan cheese and black pepper. Whisk it slightly.

When the pasta is about to be ready, reduce the heat of the pancetta and add the olive oil

Once the pasta is ready, remove and add to the skillet with pancetta. The pasta does not need to be completely drained, some paste water helps to increase the creaminess of the sauce

Turn the heat off and add the egg-cheese mixture. Make sure the skillet is not hot, otherwise the egg will start to scramble.

Garnish the pasta with fresh grated parmesan and parsley flakes
