Shrimp Ceviche with Mango

Description

Summer is here calling for the refreshing ceviche!! Pair it with chilled beer!!

Ingredients

6-8 Shrimps (diced)
1/2 Jalapeno (diced)
1/4 bunch Cilantro (chopped)
1/4 cup Mango (diced)
1/4 cup Tomato (diced)
1/4 cup Onion (diced)
1/4 cup Cucumber (diced)
2 Limes (juice for curing)
1 Lemon (juice for seasoning)
1/4 tsp Cumin (for seasoning)
Salt (for seasoning)

Directions

In a bowl, combine the diced shrimps, onions and lime juice.

Set the shrimp and onion aside to let the shrimp cure (cook) for 25-30 min. The shrimp will change color from being translucent to opaque

While waiting, combine the rest of ingredient in separate bowl and mix it thoroughly

Let the mixture sit in the refrigerator while waiting for the shrimp to be ready

Once the shrimps are opaque, combine it with the rest of the ingredients

Serve the shrimp ceviche cold with some tortilla chips
