Vegan Tofu with Quinoa

Description

This is an easy vegan recipe of tofu and quinoa!

 

Tips

You can easily find the chili garlic sauce in Walmart, Kroger or in any asian grocery stores

Simply use a fork to mash the tofu into small pieces after draining the tofu water

Ingredients

1 firm or extra firm tofu (mashed)
1/2 cup quinoa
2 carrots (grated)
1-2 shallots (chopped)
1 tbs olive oil
1 tbs chili garlic sauce
Salt for seasoning
Dried parsley (for garnish)

Directions

Cook quinoa according to manufacturer's instructions

On medium high heat, warm up olive oil

Toss the shallots and let it brown slightly

Add the mashed tofu, grated carrots, chili garlic sauce, salt and let it cook for about 8-10 min. Some water may ooze out of the tofu

Add the cooked quinoa to the tofu and mix thoroughly. The quinoa will absorb the excess water

Remove from heat and garnish with dried parsley
