This is an easy vegan recipe of tofu and quinoa!
You can easily find the chili garlic sauce in Walmart, Kroger or in any asian grocery stores
Simply use a fork to mash the tofu into small pieces after draining the tofu water
|1 firm or extra firm tofu (mashed)|
|1/2 cup quinoa|
|2 carrots (grated)|
|1-2 shallots (chopped)|
|1 tbs olive oil|
|1 tbs chili garlic sauce|
|Salt for seasoning|
|Dried parsley (for garnish)|
