Peanut Curry Chicken

Description

This is a Thai inspired chicken  cooked with peanut and curry flavor. It is a simple but flavorful recipe that can be paired with steamed rice and blanched vegetables. The dish has a nice balance between spiciness of the curry and sweetness of the peanut butter.

If you are a peanut butter lover, you should definitely try this!

Tips

Make sure to let the curry simmer enough to ensure the curry powder is cooked. The curry is not considered cooked if you get the powder feel when you taste it. If the curry powder is cooked, it should feel more smooth and taste like a spicy chicken broth.

You can easily find the chili garlic sauce in Walmart, Kroger or in any asian grocery stores

Ingredients

2 tbs Cooking oil
2 lb Chicken thighs (cut into small pieces)
1 1/2 tbs chili garlic sauce (substitute: 1 tbs crushed red pepper)
1 1/2 tbs Curry powder
1/2 tsp Salt
2 tbs Peanut butter (creamy style)
Water (optional)
Cilantro (garnish - optional)

Directions

Heat the cooking oil in a skillet on medium high heat

Add the chicken thighs to the hot oil

Add some salt and mix well

Cook the chicken thoroughly, takes about 7-8 minutes

Add the chili garlic sauce and stir to mix it evenly

Add curry powder and mix it. You may add some water to make the gravy slightly thin

Let the curry simmer for 5-10 minutes

Reduce the heat to low

Add the peanut butter and stir. The curry will thicken up

Garnish with some cilantro (optional)
