Description

Easy salad recipe for quick lunch, dinner or even for snack. This salad is very healthy because it provides a lot of protein from the beans, vitamins and minerals from the spinach and mini peppers.

Top it with your favorite salad dressing! My suggestion is Cilantro Avocado Yogurt dressing

Tips

  1. Kidney beans and black beans need more rinsing than garbanzo beans and corn
  2. 1 can of each beans and corn can last for 5 servings. Easy lunch for a workweek!

Ingredients

3-4 mini sweet peppers (assorted colors)
1 cup baby spinach
1/4 cup black beans (from can)
1/4 cup kidney beans (from can)
1/4 cup garbanzo beans (from can)
1/4 cup corn kernels (from can)
1/4 cup finely shredded fiesta blend cheese
Salad dressing

Directions

Remove the seeds and chop the mini peppers into small pieces

For the black beans, kidney beans, garbanzo beans and corn kernels, drain their water and rinse it slightly with running cold water

Mix the chopped peppers, black beans, kidney beans, garbanzo beans, corn kernels, spinach and shredded cheese

Serve it with your favorite salad dressing
