Malaysian Style Chicken Rice

Description

This is not a traditional recipe of chicken rice. The recipe is simplified to cater the needs of busy people without altering the great taste of the dish! Don’t get overwhelmed by the number of ingredients. The recipe is very simple and straight forward, give it a try!

Ingredients

1 cup jasmine rice
1 1/2 cup water
3 chicken thighs (medium size)
1 tbs soy sauce
1 tsp oil
1/2 tsp salt
2 stalk green onions (cut into half)
6-8 ginger slices
1 chicken bouillon cube (crushed into powder)
sliced cucumbers
Sauce 1:
1 tbs soy sauce
1 tbs oyster sauce
1 tbs honey
1 tsp sesame oil
2 tbs water
Sauce 2:
1 tbs garlic chilli paste
1 tbs brown sugar
1 tsp rice vinegar
1 tbs water

Directions

In a pot, place the rice, water, oil, soy sauce, salt, chicken bouillon and stir well

Place the chicken thighs on top of the rice in a single layer and top it with ginger slices and green onion

Cover the pot with a lid and cook on high heat for 5-7 min

Once the water starts boiling, reduce the heat to medium and continue to cook for another 20 min

In the mean time, prepare the sauces by simply combining the ingredients in small bowls

After 20 min, remove the pot from the stove to avoid burning the bottom

Carefully remove the chicken thighs, slice it and serve it with the rice, cucumber slices and sauces
