This is an easy vegan recipe of tofu and quinoa!
You can easily find the chili garlic sauce in Walmart, Kroger or in any asian grocery stores
Simply use a fork to mash the tofu into small pieces after draining the tofu water
| 1 firm or extra firm tofu (mashed) |
| 1/2 cup quinoa |
| 2 carrots (grated) |
| 1-2 shallots (chopped) |
| 1 tbs olive oil |
| 1 tbs chili garlic sauce |
| Salt for seasoning |
| Dried parsley (for garnish) |
